Víno J. Stávek Winery: The one of the best Blaufränkisch, fortified and rosé wines in Czech republic

The family winery Víno J. Stávek perfectly combines respect for tradition and innovative approaches. The winery specializes in the production of fortified and rosé wines, which have long been among the best in the Czech Republic. Family cuvées are also an important part of the production, the recipe of which always comes from one of the ancestors of the current oenologist Jan Stávek. Frankovka from traditional routes is a profile variety of the winery.

The Jan Stávek winery continues the winemaking tradition of 3 generations

The winemaking tradition in the Kopřiva family has a deep history. In the 20’s of the 20th century, František Kopřiva was a well-known winemaker, innkeeper and also the chairman of the local Sokol. His wines were delivered not only to the tables of Prague townspeople, but even to Vienna. Honza Stávek’s great-grandfather, František, also laid the foundation for the rustic cuvée Karmazín. Guests flocked to the Kopřiva family not only for excellent wine, but also for great-grandmother Maria Kopřivová’s excellent cooking.

In 1913, a son, Boleslav Kopřiva, was born to František and Maria, who continued to take care of the Vinařský dům and the winery. In the same year, on the other side of the village, Josef Stávek was born in the family of a simple vineyard worker Bartolomej Stávek, who came to Němčičky from Čejkovice. Bartolomej was also a classmate of the first Czechoslovak president Tomáš Garrique Masaryk.

Jožka Stávek was a small winemaker, but all the more sociable and cheerful. After all, his mischievously long-hidden recipe was the cuvée Dědova večerka. During his life he raised three sons, three daughters and twelve grandchildren. Almost everyone of them is engaged in winemaking these days.

Cuvée Dědova (Grandfather's) večerka. The author of the recipe is Josef Stávek, who made the same wine for himself. It is a light, fresh and very drinkable wine. Večerka is the popular name for the Veltlín red morning variety. The mixture also contains the Riesling Vlasský variety.

Jožko’s son Jaroslav Stávek married into the Kopřiva family and took over the winery. His family recipe is cuvée Áčko, which reflects the style of his favorite wines.

Previously, the varieties were classified into different classes depending on the quality of the grapes. The best class, the so-called Áčko, included, among others, the Rulandské bílé, Sauvignon and Gewurztraminer (Tramín) varieties, which form the basis of the Áčko cuvée.

For Jan Stávek, working in the vineyard and in the cellar as a young man was boring and mundane, so after graduating from the gymnasium in Hustopeče, he did not start studying winemaking at university. First, he successfully completed the study of ecochemistry at the Faculty of Natural Sciences of the Palacký University in Olomouc.

He started studying winemaking only after several harvests of his own winemaking. His interest in wine technology was so deep that after obtaining a red engineering diploma, he also obtained a doctorate after writing his dissertation. During his studies, he went on numerous wine internships abroad (Germany, Austria, Portugal, Spain, Italy, Madeira, Cyprus, Moldova, Brazil, Australia).

He is an external ecologist in several Moravian wineries, but above all he sets the direction and style of the family winery VÍNO J. STÁVEK, where he “has fun with wine”. In 2017, his family business became the absolute winner of the prestigious Winery of the Year competition. In 2020, he also received the title of Enologist of the Year of the Czech Republic.

He now shares his acquired theoretical knowledge and practical knowledge with students as a lecturer at the Vine Academy in Valtice, the National Vine Center and also the Czech University of Agriculture in Prague. He is the author of several books on wine. He holds sensory tests, sits at international competitions for the Czech Republic and is a forensic expert.

Specialists in liqueur wines

Honza Stávek is a specialist in liqueur wines produced using port wine technology. This is a technology of fortification (refining), during which a very delicate aged wine distillate is added to the fermenting grape must. This stops the fermentation, leaving the rest of the natural grape sugar in the wine. The Moravian variant of port wine is the result of the inventive approach of the young generation of local winegrowers and winemakers. Their art has added more fruitiness and freshness to the elegant drink, an authentic and inimitable expression of the northern wine regions. VÍNO J. STÁVEK belongs to the three producers who are the only ones in the Czech Republic to have a concession for the production of these wines, apparently also due to the fact that the fortification method is not simple.

Top rosé wines

Rosé wines are produced using a system that respects the terroir and are, together with the wines of Jiří Hort, among the best rosé wines from the Czech Republic. They are therefore produced under the name of the individual lines from which the grapes for the preparation of the wines in question come. You can taste Rosé Růžený, Rosé Veselý or Rosé Nad Zahrady. During production, maximum emphasis is placed on maintaining the characteristics of the variety, the soil, but at the same time preserving the fruitiness, purity and freshness of the wine. The theoretical and experimental work of Jan Stávek was apparently put to good use when creating a dissertation dealing with rosé wines.
